Designer Creates Brutalism-Inspired Candy

Kia Utzon-Frank, trained goldsmith and descendant of architects, recently designed a series of sweets inspired by the Barbican Centre’s Brutalist architecture in London.

The style of Danish sweet, known as flødeboller, is most commonly known as a chocolate-coated marshmallow treat. Utzon-Frank’s take features a soft Italian meringue center and a thin marzipan base, covered in chocolate.

The designer gave the sweets their stone-like finish by mixing white chocolate with natural black colorants and ground ingredients such as black sesame and Rice Krispies. Utzon-Frank also kept the hand-chiseled appearance of the Barbican in mind as she designed the flødeboller.

Each piece can be one of several shapes, including cubes, pyramids and half-spheres, as well as appearing marbled or speckled. Utzon-Frank focused on the contrast with the inedible, stony appearance of the sweets and their marshmallow interiors.

The designer said in an interview that she enjoyed new connections between different fields of work, while exploring fields she didn’t know anything about. She went on to add that, as the daughter of architect parents and the granddaughter of sculptor grandparents and great-grandparents, making these kinds of desserts came naturally.

Utzon-Frank had previously worked with the Barbican Centre previously in developing Brutalist-inspired paper-engineering classes. Creating the Brutalist sweets for the Barbican was a natural next step.

Currently, the flødeboller is not available for purchase, but those interested can learn to make it during Utzon-Frank's masterclasses. The next one will be March 3, at the KitchenAid store in central London.
